  • Hot Chocolate was a huge success at the Santa Parade. Location was perfect. Big THANK YOU to Tim Hortons for supplying us with hot chocolate and doughnuts. People were excited to see the Christmas cups from Tim Hortons.
  • Sutherland School had their Christmas supper. Thank you to ALL that helped and served, it was VERY much appreciated.
  • Brent C and Dave K attended the Care and Share wine and cheese.

A good time was had by all.

AN HCO Christmas

All the stockings were hung by the chimney with care,
In hopes that the Governor soon would be there.
Our President would like a roster that’s bigger,
That is one of our goals for the 2011 I figure.
On Dasher, on Dancer, on Vixen we roar,
We work hard to give the kids more.
Yes Friends of Youth is what we are,
It is the kids that are our shining star.
Then back to Venice House we will go,
To sort out our goals, yup right through the snow.

GOODY FOR GOODIES

PEPPERMINT-CHOCOLATE SAUCE
2 cups (12 ounces) semisweet chocolate chips
1 ¼ to 1 ½ cups half and half, divided
½ cup finely crushed hard peppermint candy
               Combine chocolate chips, 1 cup half and half  and candy in a small sauce pan. Cook over medium-low heat about 12 minutes or until candy melts. Stir often. Stir in enough remaining ½ and ½ for desired consistency.
Serve over waffles, pound cake, ice cream or whatever. Store in fridge up to 2 weeks. Yields up to 2 ½ cups.

Jack-O-Lantern Frosties

4-6 Oranges
1 (8 ounce) container of plain yogurt or ice cream
Straws

Cut a thin slice of peel from the bottom of each orange so that it will not roll. Slice off the top 1/3 of each orange. Scoop out the inside with a knife or grapefruit spoon.Put the pulp (minus the seeds) and juice into a blender. Add yogurt or ice cream. Blend well. Decorate the orange like a jack-o-lantern. Cut a hole in the cap to insert a straw. Pour drink in orange, place on the cap and enjoy!

White Hot Chocolate

A dessert you can drink!

Milk 1 cup (250 ml)
Vanilla ¼ teaspoon (1 ml)
White chocolate bar, chopped (about ½ cup, 125 ml)
Whipped cream (or frozen whipped topping, thawed)

Heat and stir milk in small heavy saucepan on medium until bubbles form around edge. Remove from heat. Add chocolate bar pieces and vanilla. Stir until chocolate is melted and mixture is smooth. Makes about 1 1/3 cups (325 ml). Pour into mugs and enjoy!

Pickle Roll Ups

1 Jar of Pickles
1 package of Cream Cheese
1 package Smoked Meat, thin sliced

Roll pickle completely in cream cheese with hands. Wrap in one layer of meat. Chill for at least one hour. Then slice rolls into wheels.

Creamy Pesto Dip

1 cup well packed basil leaves
2 tsp lemon juice
2 tbsp toasted pine nuts
1 tsp minced garlic
2 tbsp grated parmesan cheese
½ cup 5% ricotta cheese
2 tbsp oil
¼ cup light sour cream

Put basil, pine nuts, parmesan cheese, olive oil, lemon juice and garlic in food processor; process until finely chopped, scraping sides of bowl down once. Add ricotta and sour cream and process until smooth. Serve with pita or tortilla chips or fresh vegetables.

2 Graham crackers
Sugar-free chocolate pudding [prepared]
Sliced bananas

Spread one graham cracker with sugar-free chocolate pudding that has been prepared. Top with thinly sliced banana. Put other graham cracker on top. Wrap and freeze; when thawed it is gooey.

Steak

MARINADE: 2 teaspoons Montreal Steak Spice, ¼ cup olive oil, 1 tablespoon Liquid smoke and 2 tablespoons soy sauce. Let sit 20 minutes or over night. Smoke with apple wood chips for that finishing touch.
LEFT OVER STEAK (I see you laughing): Wrap sliced steak in flour or corn large soft tortillas with: bits of bacon, green onions, peppers, dill (or Ranch) sauce and grated cheeses (cheddar and mozzarella ). Roll and microwave for at least a minute (to melt cheese). Cut rolls in half and enjoy !!!

GOODY FOR GOODIES

Corn On The Cob BBQ Style
6 ears of corn with the husk
1 teaspoon garlic powder
1 cup Cheez Whiz
½ teaspoon onion powder
2 tablespoons margarine
Pull back (but don’t rip off) the husk of corn and remove the feathers.
Melt Cheez Whiz and margarine. Add garlic and onion powders. Mix.
Brush onto corn (this will be drippy). Put husk back on corn and cover with foil (shiny side in). BBQ on medium for 10 minutes a side. Remove from heat and take off foil and husk (we use oven mitts for this). MMMM ENJOY!!!

WAAAY TOO EASY GRAVY

For every 1 cup of liquid (drippings, broth or combo) use 2 tablespoons of flour.

Measure liquid into a sauce pan. Add flour. Add a bit of salt and pepper if you like. Turn on stove to a bit over medium. Wisk until thickened. Strain and serve.

*Cook too fast and it may burn. You want a light bubble.

*Use brand name broth or it will taste icky. I use Campbell’s Beef Broth.

If you have termites and rabbits you have Bugs Bunny.

MINTS

30 ml hard margarine, softened
1 large egg white
2 ml peppermint flavouring
625 ml icing sugar (to start)
3 drops green food coloring

Beat margarine, egg white, flavouring and food coloring in small bowl.
Slowly beat in icing sugar. Shape into 12 mm (1/2 inch) pieces.
Arrange on wax paper-lined baking sheet. Let stand overnight until dry.
Store in airtight container.  Makes 7-8 dozen.

175 ml boiling water
2 Maraschino cherries
1 Orange Pekoe tea bag
1 scoop of vanilla ice cream
60 ml chilled Maraschino cherry syrup
125 ml chilled lemon lime soft drink

Pour boiling water over tea bag in small teapot. Let steep for 10 min. Squeeze and discard tea bag.
Pour tea into 2 cup (500 ml) liquid measure. Chill.
Add cherry syrup and soft drink. Stir well.
Put cherries into tall 16 oz. (500 ml) glass. Add ice cream.
Slowly pour tea mixture over ice cream. Foam will form. Serve with long spoon and straw.
